Our house has a great backyard with lots of foliage and a few fruit trees, including a beautiful fig tree. One of our favorite things to make with the figs from our fig tree is special pizza. It uses a pre-made crust and is super simple to execute.
FIG AND PROSCIUTTO PIZZA
Ingredients
8 fresh figs, cut into quarters with stem cut off
goat cheese
prosciutto
pre-made pizza crust ( I like the frozen ones from Trader Joe’s in packs of 2)
a large handful of arugula
extra virgin olive oil
kosher salt
fresh ground pepper
Note: I didn’t give proportions or amounts above because I like to cook by feel–just make sure you have enough of the ingredients to cover the pizza.
To Prepare:
–Preheat oven to 425. Drizzle crust with olive oil. Add dollops of goat cheese to cover the crust. Spread the quartered figs on the pizza. Add a little salt and pepper.
–Stick pizza in the oven. Cook till crust is golden–figs should be soft and goat cheese should be melted. Toss arugula with olive oil. Sprinkle the arugula on top of the pizza. Don’t use too much-make sure you can see the pizza through the arugula.
–Cut and serve. We like to drink a nice, fruity rose’ with this pizza, like McEvoy Ranch’s Rosebud Rose‘. Their vineyard and olive groves are just up the road–we like to keep it local when we can.
